precooked cornmeal to make cornbread?

I'm making cornbread following this recipe:
1-1/4 cup Pamela's Baking & Pancake Mix
1 cup fine yellow cornmeal
1/3 cup sugar or honey
1/2 teaspoon salt
1 egg, beaten (for fluffier muffins use two eggs)
1 cup milk
2 tablespoons melted butter

buuut only have PRECOOKED cornmeal and "golden corn flour - masa harina." Can I use either?

Masa is for tortillas, and precooked cornmeal is polenta...you could try the masa, but you probably wouldn't get the results you're looking for.

If precooked cornmeal is polenta, I'd use that: it's what I use to make cornbread when I'm in England, and it functions very similarly to cornmeal, in my experience. (It is technically different, but ... close enough for government work, or something ;P).

I wouldn't use the masa harina, that'll have entirely the wrong texture. It should be like flour (well, it is a flour), but you need something coarse.

Her recipe calls for 'fine' cornmeal so the polenta would work, wouldn't it? In fact, if she had a food processor, I'd give the polenta a whirl in it to grind it finer if necessary.

Aye, I still think the polenta will work just fine. Where I shop, it comes in fine, medium, or coarse, so it'll depend on what OP's got as to whether it needs to be finer.

I was just trying to say that whatever cornmeal one uses in a cornbread needs to be coarser than flour! :-)

I like the fine version of cornmeal myself. I use equal parts all purpose and cornmeal in my cornbread recipe and then add about 1/2 cup or so of frozen or canned corn to boost the corn flavour.

I use masa in cornbread all the time. The texture in rather cake-like but the flavor is very good.

i ended up using the golden corn flour - masa harina.
interesting i guess haha. not really delicious though.
next time i'll be sure to have regular cornmeal.
