Frosting: Butter or Margarine!?


Hi there!

I want make my first frosting from scratch. All the recipes I have found say butter, will margarine work just as well?
I uaually replace butter in my baking because I never seem to have it around and always have a tub of the other and I haven't had a problem, but since I have never made frosting I figured I should ask!

The recipe i'm looking at is from www.foodnetwork.com

  • 3 cups confectioners' sugar 
  • 1 cup butter
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons whipping cream

I think butter will taste much better but you can make it with margarine.

My son has a dairy allergy, and we always use a vegan margarine when making frosting. It will work just fine.

I can't imagine margarine tasting very good, but if you don't have butter on hand (or cholesterol is an issue), then I'm sure it will be okay.

It'll probably work, it'll just be bland in comparison. You can buy sticks of butter next time and freeze them, it lasts for a long time. :)

The major difference (other than flavor of course) is the texture. Margarine is a shortening based butter substitute. This means, while butter will melt in your mouth, margarine (like shortening) is firmer and often leaves a film in the mouth.

So yes, it will work. But it will be quite different. There are also different types of baker's margarines that are designed for use in cakes and pastries and are different than the ones you get at the supermarket.

This - the texture with margarine will be different. You could substitute solid shortening too... but butter will taste best

I don't like the mouthfeel of most margarines. I pretty much use butter, natural oils, and lard exclusively in cooking.

*shudder* You can if you wanna but I think margarine tastes nasty.
