Savory Oatmeal

In honor of the first day of Winter, I wanted to make a yummy warm breakfast. Usually we make our oatmeal sweet, but I am a fan of savory oatmeal, so I'll share my super easy recipe with you here.

Ingredients:
1/4 white onion chopped
1/2 T butter
Oatmeal (whatever kind you normally use for the stovetop - I use quick oats from Quaker)
Water or Milk (depending on what you like with your oatmeal - follow package directions)
1 Egg cracked into a small bowl
1/2 T Lemon Juice
Dash of dried Italian Herbs
Dash of fresh ground Pepper
Smidge of Grated cheese

Directions:
Cook onions in pot with butter
After onions are soft, add water to pot, bring to a boil
Add oats to pot, lower heat, cook until desired texture
Add a dash of Italian herbs and pepper to taste
Meanwhile...
In a separate pot, Poach an egg - (I don't have an egg poacher so this is how I do it: fill small non stick pot with less than an inch of water, add about 1/2 T of lemon juice, bring water to a boil, crack egg in a small bowl, add egg to boiling water, return water to a boil then cover and promptly remove pot from heat, poach single egg for about 3 minutes, remove with slotted spoon)
Put the oatmeal in a bowl, poached egg on top, sprinkled with grated cheese
YUMMY!
