Chocolate and water?

I want to make this but it calls for me to put chopped chocolate in boing water to melt it. As far as I understand it chocolate and water are a bad mix. If I put chocolate in water won't it seize?

boiling water is fine as the melting point for chocolate is much lower

it is when you add cold water to melted chocolate that it seizes

Water in melted chocolate is very similar to water in sugar. A drop or two will attract all the molecules and clump together in a hard lump, a larger amount dissolves it just fine. Alton Brown's got a great video on it somewhere.
