Ingredients:
-3 Large Pork Chops (cut in half)
-Caramelized Onions to top
-3 Pears
-1 Small Pineapple
-2 Shots Rum
-2 Tablespoons Curry Powder
-2 Tablespoons Brown Sugar (up to ¼ Cup, to taste)
-3 Tablespoons Butter
Instructions:
1. Slice pineapple and pears thinly
2. Butter glass baking dish
3. Add fruit
4. Sprinkle on curry powder and brown sugar
5. Sprinkle with rum
6. Heat oven to 350 degrees
7. After brining pork chops, dry and slice horizontally
8. Heat frying pan on medium heat with olive oil and sear each chop 1 minute each side (caramel color should appear)
9. Add to baking dish and top each chop with caramelized onions
10. Bake for 45 minutes
