Hamburger Rice Skillet
1 lb ground beef
1 med onion, diced
2 ribs celery, sliced
2 carrots, shredded
2 tsp beef bouillon dissolved in 1/2 cup hot water
salt & pepper
3 Tbsp flour
2 cups milk
2 cups cooked rice
Brown the ground beef in a large heavy skillet.
Clean and cut the onions, celery, and carrots. Add them to the skillet and and continue cooking covered on medium heat, stirring occasionally until the vegetables are tender. Add the beef bouillon and salt and pepper to taste. Mix the flour into the cold milk and make sure there are no lumps them stir into the skillet. Continue stirring until the liquids thicken.
Mix in rice and heat through then serve.
I looked all over for a hamburger rice casserole that didn't include cheese, tomatoes, or chilies. I was sure I had eaten this as a child. My mom says I'm probably remembering her hamburger Stroganoff. She's probably right but this version has less fat and more vegetables. You could add even more vegetables and a bit of heat to this if you want.
