1 (12 oz) bottle Wild Blue Blueberry Lager
2 Tbsp Honey
3/4 c (1 1/2 sticks) (12 Tbsp) Butter
1 cup Sugar
1 large Egg
Zest from 1 Lemon
3 cups all-purpose Flour
1 tsp Baking Soda
3 oz sweetened Dried Wild Blueberries
Combine the beer and honey in a small sauce pan and simmer until it reduces to 3/4 cup. It will bubble more vigorously when it reaches the right concentration. Let this reduction cool to room temperature.
Preheat the oven to 350F
Cream the butter and sugar together. Add the egg and blend thoroughly.
Then add the vanilla, lemon zest, and beer reduction and blend again.
Add the flour and baking soda and blend again.
Fold in the dried blueberries.
Line baking sheets with parchment paper and drop spoonfuls of batter on the sheets. (I use my #40 disher for even "walnut sized" balls)
Bake for 12-16 minutes at 350F
Makes about 40 cookies.
Mildly sweet cake-like cookies with crunchy crust. Would be good with tea.
