Crab-Cheese Pilaf

A "dieters" version from the Weight-Watching chapter of the Good Housekeeping Cookbook, 1963.

Crab-Cheese Pilaf



(recipe and instructions are written as found in cookbook)

(240 calories per serving)

2 tablesp. salad oil
1 cup chopped onion
1 cup sliced celery
1/4 cup diced green pepper
1/4 lb fresh mushrooms, sliced, or 1 3-or 4-oz. can mushrooms (optional)
1/2 cup thinly sliced carrots
1 teasp. salt
1 bay leaf, crumbled
1 tablesp. granulated sugar
2 l-lb. cans tomatoes
3/4 cup packaged pre-cooked rice
2 6- to 7-oz. cans King-crab meat, drained
1/2 cup grated natural Cheddar cheese

Start heating oven to 350 degrees F.  In salad oil, in a large ovenproof skillet, saute onion, celery, green pepper, mushrooms, and carrots until onion is golden brown; add salt, bay leaf, sugar, and tomatoes; simmer 5 min.  Stir rice and crab meat into tomato mixture; sprinkle cheese on top; bake 20 to 25 min.  Serve in soup bowls, if desired.  Makes 5 servings.

I imagine that the illustration for the 1963 recipe did not look as tasty as this does. I love old cookbooks and it makes me laugh that the photographs are often so unappetizing.

Thank you. This recipe, sadly, had no illustration or picture. YET, that said, some of the lovely brownish tint photographs throughout are so lovely. There is one picture in there that claims to be a meat dish yet it looks like bread? lol
