Christiana Campbell's Tavern Rum Cream Pie

I recently was able to visit Colonial Williamsburg in Virginia, and had dinner at Christiana Campbell's Tavern. It was a wonderful experience! The food was excellent, the service impeccable. It truly was an experience to remember. Below is the recipe for the Rum Cream Pie, which one person in our party had for dessert. I tasted it, and vowed to find the recipe, it was so very delicious!

Christiana Campbell's Tavern Rum Cream Pie

Located in Colonial Williamsburg in Virginia, Christiana Campbell's Tavern is described as: "This historic tavern, George Washington's personal favorite, offers such seafood specialties as: Sherried Crab Stew, Crab Cakes, Seafood Muddle (a dish of fresh seafood, seasoned broth and Saffron Vegetable Pilau), Gloucester Chicken, and Gridironed Delmonico Steak. The entrees are complemented by long-time tavern favorites: Campbell's Cabbage Slaw, Spoon Bread and Sweet Potato Muffins." You can learn more about Christiana's at:

crumb crust (see below)
1 envelope unflavored gelatin
5 egg yolks
1 cup sugar
1/2 cup dark rum
1/2 cup whipping cream
unsweetened chocolate

Prepare a crumb crust (below). Soften the gelatin in 1/2 cup of cold water. Place over low heat and bring almost to a boil, stirring to dissolve. Beat the egg yolks and sugar until very light. Stir the gelatin into the egg mixture. Cool. Gradually add the rum, beating constantly. Whip the cream until it stands in soft peaks and fold it into gelatin mixture. Cool until the mixture begins to set, then spoon it into the crumb crust and chill until firm enough to cut. Grate the unsweetened chocolate over the top before serving.

Crumb Crust

2 1/4 cups graham cracker crumbs
1/2 cup butter, melted
2 tablespoons sugar
1/2 teaspoon cinnamon

Combine the ingredients and press into a 9-inch pie pan. Chill.
